Garden tomato recipes

Recipes for what to do with all of the tomato's in your household garden. How to make fried green tomatos. French dressing. Garlic dressing taste of Italy.

Are you overwhelmed with your overabundance of tomatoes this year?

What to do?

1. Fried Green Tomatoes is not just a movie!

Slice tomato up as if you were slicing an eggplant.

Dip slices in egg batter.

Coat in flour or bread crumb.

Fry in olive oil over medium heat.

Place on paper towel when done.

Sprinkle your favorite cheese on it and enjoy!

You can also layer and make fried green tomato parmesan.

2. Make a sauce for winter!

Dice ripe tomatoes up and cook in a large saucepan.

Place them in containers and freeze for winter use.

It is better to place in bags for easier defrosting.

3. How about a tuna boat? My favorite!

Scoop out the innards of ripe tomato and stuff with your favorite tuna recipe!

4. Dice up and add to your egg omelet.

5. Add salt and pepper and just eat it like an apple!

Bringing forth that special summer-fresh taste of Italy with a Roasted Garlic Dressing is absolutely divine!

Here’s how!

20--cloves of garlic

2 ---cups olive oil

2/3--cup balsamic vinegar

2/3 --cup of bottled water

2 TB---spicy brown mustard

2 tsp.-- salt and pepper

Bake garlic cloves in oven at 350 for 1 hour.

Let cool.

Squeeze garlic from skins.

Puree garlic cloves with all ingredients until smooth.

Makes 1 quart.

Pour over tomatoes and enjoy!

For a sweet dressing try my simple French Dressing.

Place in bowl:

1 cup of mayonnaise

1 cup of ketchup

¼ cup of soy milk, or milk.

Mix with fork till blended, add salt and pepper to taste.

You will have the best French dressing you ever tasted without all the preservatives that are added to other dressings and mixes.

Pour over tomatoes and enjoy!
