250 grams quiche pastry or frozen puff pastry
100 grams baby spinach and rocket leaves and mixed herbs
250 grams fat trimmed bacon
8 extra large eggs
2 cups cream
Salt
Coarsely milled black pepper
Rollout the pastry and use it to line a quiche pan or pie dish. Place the baby spinach, rocket and mixed herbs in the pastry-lined pan. Place the bacon on top of the greens
Beat the eggs and cream, season them with salt and pepper
Pout the egg mixture over the bacon and greens.
Bake for 45 minutes at 180 degrees Celsius.
