This zesty salad is a summer favorite, made up of green lentils, yogurt, cream cheese, fresh fruit, raisins, mint, fresh spinach, walnuts. The unique and suprising taste makes for a great summer luncheon salad, or early dinner party appetizer. It also makes a healthy homemade lunch for 1 (just halve the recipe and build to taste). This dish is vegetarian. This recipe serves 4.
INGREDIENTS:
20 oz. canned green lentils, drained
4 tbsp. yogurt and cream cheese, blended together 2 cups fresh fruit, peeled, destoned and chopped (mangoes, avocados, guavas)
1 cup golden raisins
1 tsp. salt
1 tsp. black pepper
1 tbsp. dried mint
1 bunch fresh spinach, chopped
1 cup walnuts, halved
METHOD:
Using a food processor, mix yogurt cheese mixture with dried mint, salt and black pepper. Chill and set aside.
Meanwhile, arrange spinach on a salad platter. Mix together green lentils and fresh fruit. Spoon lentil mixture on top of the spinach. Pour over minted cheese yogurt dressing and garnish with walnut halves and golden raisins. Serve chilled with buttered bagels.
