1 baked 9-inch pie shell
1/4 c sugar
Dash salt
3 tbsp cornstarch
1 1/2 c milk
2 egg yolks
1/2 tsp vanilla
1 1/2 oz coconut
1/2 pt whipping cream
Combine sugar, salt, cornstarch, and milk in saucepan. Cook till thickened. Remove from heat. Add slightly beaten egg yolks to mixture. Cook for 2 minutes. Remove from heat. Add coconut and vanilla. Cool. When the pudding has cooled, whip cream. Add 1/2 of the the whipped cream to pudding and mix. Pour in baked crust. Put rest of whipped cream on top of pie. Refrigerate till serving time.
